Coffee, Oat and Chia Seed Smoothie

Lately I have been absolutely in love with breakfast smoothies.  What’s not to love?  I am a busy mom, and after I get my kids fed in the mornings I usually forget to feed myself (sound familiar?)  The beauty of this creation is that you make it the night before and pop it into the refrigerator.  This gives the chia seeds time to puff up and provide delicious texture.  Yummy.. In this particular recipe you will find a list of nutrient dense ingredients (with a little kick of caffeine) that will start your day off on the right foot.. And what makes it even better?  You grab it on the way out the door!  It doesn’t get any more convenient than that..

You will need:

These quantities yield two servings

2/3 cup of oats

2 teaspoons chia seeds

1 cup of coffee (I use whatever was left in the pot from the same morning, just place the coffee pot in the fridge until you are ready to prepare your smoothie to keep the coffee fresh.)

1 and a half teaspoons cinnamon

2/3 cup to 1 cup coconut, almond or nonfat organic milk

2 tablespoons almond butter

Sweetener of your choice to taste (Agave, honey, or palm sugar work well)



Place your oats and chia seeds into the blender and pulse until oats are a powdery consistency.  Add in all other ingredients except sweetener and blend well.  Taste and add sweetener to desired flavor (start with 1 teaspoon).  Check consistency, note that the smoothie will thicken overnight.  Add more coffee or milk if you feel its too thick and blend again.  Split in to two separate containers with lids (I use mason jars)  Refrigerate overnight.  When your ready to eat your smoothie, give it a good shake first..
