Citrus herb chicken and fiery noodle wrap ups

This recipe is packed with flavor!  Large leaf chard is a peppery, dense and robust.  The chicken and noodles offer the generous essence necessary to compliment the chard.  Try topping your wrap with avocado and tomato for added color and texture.. We used sriracha for some extra kick.

From this weeks organic produce box from Urban Edge Farm we will use: Curry herb, 2 oranges, large leaf chard.

Marinade:

  • 2 tablespoons soy sauce
  • juice of 2 oranges
  • juice of 1 lime
  • 2 large scallions chopped
  • 1 and a half tablespoons honey
  •  2 teaspoons fresh ginger root, minced
  • 3 cloves garlic, minced
  • 2 teaspoons fresh curry (herb), minced
  • 3 tablespoons fresh cilantro, minced
  • fresh cracked pepper
  • crushed red pepper (optional) to taste
  • 2 lbs boneless skinless chicken thigh meat – organic
  • 1 teaspoon sesame oil

Noodles:

  • Shiritaki or chow mein noodles – 16 oz
  • 1 to 2 tbs soy sauce
  • 1 lime
  • 1 teaspoon fresh ginger
  • 1 fresh red chile
  • 2 tablespoon cilantro
  • 1/2 a red onion
  • 1 teaspoon  oyster sauce
  • 1 teaspoon honey
  • 1/2 cup crushed cashews (or nut of your choice)
  • 1 teaspoon sesame oil
  • Salt and pepper

Wrap:

  • 1 bundle large leaf chard

Create: Mix all marinade ingredients in a large bowl or plastic bag and add chicken.  Refrigerate for at least 2 hours, overnight is best.

Noodles:  Add chopped onion, cilantro, red chile (de-seeded), and ginger into food processor and blend well.  Cook noodles as directed and drain.  Add mixture to warm noodles and add honey, oyster sauce, sesame oil, soy sauce and juice of a lime.  Wrap cashews in a clean dish towel and bash with a rolling pin or meat tenderizer until in smaller chunks and add to mixture.  Mix well with tongs.  Taste and adjust seasoning.

Chicken:  For the best flavor, cut chicken into bite sized chunks, place on skewers and grill on medium/medium high heat for 5 to 8 minutes on each side or until cooked through.

Stack noodles and chicken on top of chard and add toppings and/or your favorite hot sauce.  Fold taco style and enjoy!
