Fresh and Easy Pesto
Pesto is packed with flavor and nutrition. And it definitely falls into the category of “cheaper if you make it yourself”. Plus, if you are growing your own herbs, its the perfect use of all that awesome basil. If not, your local farmers market likely will have plenty on hand if it is late spring or summer. The other ingredients needed you likely have in your pantry already. So whip some together! There are endless uses for the stuff.. Dress up your pasta, smear on your sandwich, add to your eggs, even add a little to your salad. If you have an abundance of basil, go ahead and make a large batch and freeze it in ice cube trays for easy an easy single serving option..
You will need:
- 1 bunch of basil
- 1/4 cup pine nuts or sliced almonds – toasted
- Salt and pepper 1/2 teaspoon each, then add to taste
- Olive Oil ~ enough for desired consistency
- 1 tablespoon parmesan cheese
- Juice from one lemon
Place all ingredients except olive oil in a food processor and whiz together until nuts are well chopped. Begin adding olive oil ~ approximately quarter of a cup ~ until desired consistency is achieved. Enjoy!!
