Healthy Snack: Garlic Parmesan Roasted Chickpeas
Chickpeas AKA Garbanzo Beans are one of the worlds earliest crops. Cultivated in ancient times by the Egyptians, Greeks and Romans. These little legumes are tasty, and pack some awesome nutrition with protein and fiber being the stars of the show. Each serving (approx. 1/2 a cup) offers 6 grams of protein and 6 grams of fiber. A much better option than reaching for tortilla chips when you crave a salted, semi crunchy snack. The kids will love them! Lets look at the details..
You will need:
- 2 cans of organic chickpeas
- 2 tablespoons grated parmesan
- 1/2 teaspoon sea salt
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
Remember, you can dress these beans up with any flavors and spices you like! These are ingredients I always have in my kitchen, so we usually go with what we’ve got.
Preheat oven to 375 degrees Fahrenheit
Drain chickpeas and put into a large mixing bowl. Add all other ingredients in, and mix well. Spread the chickpeas in an even layer on a rimmed baking sheet and bake until crisp, about 30 minutes. Be sure to monitor carefully the last few minutes of baking to be sure that they don’t burn. Remove from oven and sprinkle with additional parmesan if desired. Enjoy!
